🍪 Passion Fruit Cookies Recipe
These cookies are a delightful balance of sweet, buttery goodness and tangy passion fruit flavor.
Ingredients
For the Cookies:

1 cup (2 sticks or 226g) unsalted butter, softened

1 cup (200g) granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups (315g) all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 cup (60ml) passion fruit pulp (fresh or frozen/thawed, strained to remove seeds if preferred)
For the Passion Fruit Glaze (Optional):

1 cup (120g) powdered sugar (confectioners’ sugar)

2-3 tablespoons (30-45ml) passion fruit pulp (strained, no seeds)

1/2 teaspoon vanilla extract
Instructions
1. Prepare the Dough

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

In a large bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy.

Beat in the egg and vanilla extract until just combined.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Fold in the passion fruit pulp until evenly distributed.

Chill the dough for at least 30 minutes. This prevents the cookies from spreading too much.
2. Bake the Cookies

Scoop the dough using a small cookie scoop or roll it into 1-inch balls. Place them about 2 inches apart on the prepared baking sheets.

Bake for 10-12 minutes, or until the edges are lightly golden. The centers might still look slightly soft.

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
3. Make and Apply the Glaze (Optional)

In a small bowl, whisk together the powdered sugar, passion fruit pulp, and vanilla extract until smooth. The consistency should be thick enough to coat the back of a spoon. Add more sugar or passion fruit pulp to adjust the thickness if necessary.

Once the cookies are completely cool, drizzle or spread the glaze over the tops.

Let the glaze set for about 30 minutes before serving.
